Berni's ice cream cake was such a hit at our pot luck last month we thought it would only be right to share it with you!
You can use any flavour of ice cream you like and as much as you like, so don't be afraid to experiment while satisfying your sweet tooth.
Combine the following ingredients:
- 2 ½ cups rice krispies
- ½ cup melted butter
- ¾ cup brown sugar
- 1 cup coconut
- 1 cup finely chopped pecans
Pour onto parchment paper lined cookie sheet. Bake in 300 oven for about 30 minutes – watch carefully stirring often – risk of scorching. Let cool.
Take 9 x 9 or 8 X 8 pan. Sprinkle about half of mixture in bottom. Take softened vanilla ice cream (about 1 - 1.5 bricks). Spread evenly. Top with reserved mixture. Drizzle generously with caramel sauce.
Recipe may be tripled for a 9 X 13 or 11 X 13 pan - great for potlucks and family get togethers!
This can be made well in advance and kept in freezer. Take out of freezer about 20 minutes before serving.
